do you like to pickle/can. Google Dilly beans, and you'll find all sorts of recipes. Or simply look for canning recipes. Squash you can freeze and can. I'm doing lots of freezing with veggies from my csa. I know you don't have tons of freezer space, but this is something, blanching is really easy, and for canning all you need are jars and a big pot.
