You can pretty much substitute them or add them to just about all recipes that call for vegetables. ::wry:: They taste great in stir fry, for instance, nice and crisp. Over the weekend I ate this extremely tasty dish that was just mushrooms sauteed in butter, salt, parsley, and fennel . . . gods it tasted so good. I bet you could make it really easily with green beans.
