My mom makes a "chicken divan" casserole, which is chunks of chicken with a sauce of chicken broth, custard, and mayonnaise, on a base of broccoli with cheese on top. I'm not a big broccoli fan, so I replace that with green beans and sweet corn and it tastes great. I don't have the exact recipe, but it's really yummy . . .
Alas, I don't have a recipe, but I can send you another for a gnocci skillet toss where I just throw in tons of vegetables to make up for the beans I leave out. ::wry::
